In the summer everyone love eating salads because they’re so refreshing and so easy to make.
So one of my favorite fruit is watermelon, i personally love watermelon with feta cheese, but I also love eating watermelon with a lime juice. So in this recipe, I decided to combine all these amazing flavors together, and you’re gonna love it!

The Ingredients
- Watermelon: 6 cups (900g) seedless watermelon, cut into 1-inch cubes
- Feta Cheese: 1 cup (150g / 6 oz) high-quality feta cheese
- Fresh Mint: ½ cup fresh mint leaves
- Fresh Lime Juice: 2 tablespoons (about 1 large lime)
- Extra Virgin Olive Oil: 2 tablespoons
- Fresh Chili: 1 small red chili, finely chopped (Optional, but I highly recommend it for a spicy twist!)
- Honey: 1 teaspoon (Optional, only if your watermelon is not that sweet)
Let’s Get Making!
1. Prep the Watermelon (The Sweetness Secret)
When you are shopping for your ingredients, always look for the watermelon with the yellow spot on the bottom—that means it rested on the field longer and it’s much sweeter!
First things first, we’re gonna cut our watermelon. Slice it up into nice, manageable 1-inch cubes—not too big, not too small. Just right for a salad!
(Pro tip: If your watermelon is super juicy, let the cubes sit in a colander for 5–10 minutes to drain so your salad doesn’t get soggy).

2. Dice the Feta
Next up, the feta cheese! Take your block of feta and dice it into cubes (or crumble it gently into large chunks). you want that salty, creamy goodness in every bite, seriously. Make sure you buy a block in brine, not pre-crumbled!
3. Release the Mint Aroma
Here is a trick for your mint: before you chop it, gently crush the leaves in your hands. By doing this, the mint releases so much more aroma and essential oils. It’s so intense. It smells divine! Once crushed, go ahead and finely chop it.
4. Chop the Chili
For that optional spicy kick, chop up your fresh chili. Make sure to remove the seeds if you don’t want it too spicy.
5. Dress the Salad
Place your watermelon in a large serving bowl. Squeeze the fresh lime juice over the top. Add your extra virgin olive oil—don’t be shy with it!
If your watermelon isn’t quite at peak sweetness, don’t worry. A tiny drizzle of honey right now will fix it right up.
6. Toss and Serve
Gently fold in the feta cheese, chopped chili, and mint. Toss everything together very lightly so the feta doesn’t break down and get cloudy.

½ cup (15g) fresh mint leaves, gently crushed and chopped
2 tablespoons (30ml) fresh lime juice
2 tablespoons (30ml) extra virgin olive oil
1 small fresh red chili, finely chopped (optional, seeds removed for less heat)
1 teaspoon (5ml) honey (optional, to taste)
Directions
- Slice the watermelon into uniform 1-inch cubes. If the watermelon is very juicy, place the cubes in a colander for 10 minutes to drain excess liquid.
- Dice or gently crumble the block of feta cheese into bite-sized pieces.
- Take the fresh mint leaves and lightly crush them in your palms to release their natural oils, then chop finely. Finely chop the fresh chili, removing the seeds if desired.
- Add the drained watermelon cubes to a large, shallow serving platter or bowl.
