What You’ll Need

Special Equipment

  • Stand mixer OR hand mixer
  • Medium mixing bowl
  • Small dipping bowls
  • Paring knife (for a grown-up to cut the stems)
  • Baking sheet or tray lined with parchment paper

The Ingredients

  • 8 oz (226g) Cream Cheese: Must be softened to room temperature for a smooth, fluffy texture!
  • 1/2 cup (60g) Powdered Sugar: For that perfect hint of sweetness.
  • 15 Fresh Strawberries: Washed, dried completely, and stems removed.
  • 3 Full-Sheet Graham Crackers: Crushed into tiny bits for the “crust.”

Let’s Get Making!

1. Safety First (Prep the Berries)

First things first, remember that you have to be extra safe! So make sure you always have a grown-up there with you in the kitchen to help out, especially when you are washing and cutting off the little green stems of your 15 strawberries.

Crucial Tip: Make sure you dry your washed strawberries completely with a paper towel. If they are wet, the cream cheese won’t stick!

2. Getting Started with the Cream Cheese!

The first thing you want to do is take your 8 ounces of cream cheese that has been sitting out of the fridge for an hour or two to come to room temperature. Place this into your stand mixer. Or, if you’re going to use a hand mixer, place it into a bowl! Next up, add half a cup of powdered sugar to give your cream cheese just a hint of sweetness.

3. Mixing Magic!

Close the mixer and turn it on low to start. If you turn it up too soon, you might get little flurries of powdered sugar jumping out of your mixer!

Once it’s mixed a little, turn it up to high and leave it to keep mixing for a couple of minutes until the cream cheese gets light and fluffy. Once that texture looks just about perfect, you can go ahead and turn your mixer off.

4. Prep for Dipping

Scrape your fluffy cream cheese mixture into a smaller, deeper bowl to make it easier to dip your strawberries. Place your 3 crushed-up graham crackers into another small bowl.

5. Dip and Roll!

Here is exactly how you dip them: Take a prepared strawberry and dip it into the cream cheese mixture until it’s covered on all sides. Now, roll it around in the graham cracker crumbs! Place it on your parchment-lined tray. Continue the process for all the rest of the strawberries!

6. Chill Time

When your strawberry cheesecake bites are all assembled, it’s time to put them in the fridge so that they can cool for about 20 minutes or so. This helps the soft cream cheese harden up so they are perfect for eating.

7. Taste Test!

That’s extra good! The first thing you taste is the juiciness of the strawberry. Then you get the creaminess and a little bit of sweetness from the cream cheese with the powdered sugar. And finally, the graham cracker crumbs just round it out and provide that classic strawberry cheesecake flavor!

I hope you’ll give it a try too. Have fun creating!

FAQs

Do I really need to let the cream cheese sit out?

Yes, Leaving your cream cheese out of the fridge for an hour or two brings it to room temperature. If it’s too cold, it will be lumpy and very hard to dip your delicate strawberries into!

Can I use a hand mixer instead of a stand mixer?

You sure can! A hand mixer works perfectly. Just make sure you use a good mixing bowl and hold on tight while you mix up that cream cheese and powdered sugar.

My cream cheese won’t stick to the strawberries! What happened?

No! This usually happens if your strawberries are still a little wet from being washed. Make sure you dry them completely with a paper towel before you start dipping so the cream cheese has something to grab onto!

How long do these last in the fridge?

These bites are so u0022extra goodu0022 that you’ll want to eat them right away! They are best enjoyed the exact same day you make them. If they sit in the fridge too long, the juicy strawberries will start to make the graham crackers a little soggy.

Can I put the filling inside the strawberries instead?

Definitely! We love dipping them because it’s super fun and easy to do with your hands. But, if a grown-up wants to help, they can carefully hollow out the inside of the strawberries and use a little bag to squeeze the cream cheese filling right into the center!

A fun, kid-friendly dessert that gives you all the classic flavors of a strawberry cheesecake with zero baking! Just mix, dip, roll, and chill for an extra good treat.

Ingredients

  • Equipment Needed:
  • Stand mixer or hand mixer

  • Mixing bowls

  • Baking tray

  • Ingredients:
  • 8 oz (226g) cream cheese, softened to room temperature

  • 1/2 cup (60g) powdered sugar

  • 15 fresh strawberries, washed and stems cut off

  • 3 full-sheet graham crackers, crushed into tiny bits

Directions

  • Place 8 oz of room-temperature cream cheese and 1/2 cup of powdered sugar into a mixer.
  • Turn the mixer on low to prevent the sugar from flying out, then turn it up to high for a couple of minutes until the mixture is light and fluffy.
  • Scrape the cream cheese mixture into a small dipping bowl. Place the crushed graham crackers into a separate small bowl.
  • Take a strawberry, dip it into the cream cheese mixture until completely covered, then roll it in the graham cracker crumbs.
  • Place the coated strawberry on a tray and repeat with the remaining berries.
  • Place the tray in the fridge for 20 minutes to allow the cream cheese to harden up. Serve and enjoy!

Notes

  • Safety First: Always have a grown-up help you when using a knife to cut the strawberry stems!
  • Dry Your Berries: Make sure your washed strawberries are completely patted dry with a paper towel. If they are wet, the cream cheese won’t stick to them!
  • Storage: These are best served the exact same day they are made. Strawberries naturally release moisture once cut, so enjoying them fresh is the way to go!
  • Grown-up Swap: If you prefer a cleaner look, grown-ups can hollow out the center of the strawberries and pipe the cream cheese filling inside, then sprinkle the crumbs on top!
