Let’s Get Cooking!
1. Prep the Waffle Iron
Plug in your waffle iron and let it heat up while you make the batter.
2. Start the Chocolate Base
To get started, we make a simple, rich brownie batter right in a mixing bowl. You don’t need anything fancy here—I actually like to mix a lot of this by hand! Just whisk together the ½ cup of unsweetened cocoa powder and ½ cup of melted unsalted butter until smooth.
3. Add the Eggs
Crack the 4 eggs into a small bowl and beat them lightly with a fork. Pour the beaten eggs into the cocoa mixture and stir to combine.
4. Add the Dry Ingredients & Flavor
Pour in the 1 ½ cups of granulated sugar. Next, add the 2 cups of all-purpose flour a little bit at a time, mixing gently as you go. Before you finish mixing the flour, add the ½ teaspoon of salt and 1 teaspoon of vanilla extract.
5. Fold Gently (The Secret Step!)
Do a quick fold by hand to make sure everything is just combined. The secret here is to not overmix. Just barely get those ingredients combined so your brownie waffles stay tender!
6. Grease the Iron
Once your waffle iron is hot, make sure you spray it lightly. I highly recommend spraying both the top and bottom plates with non-stick cooking spray before you add the batter, even if it’s non-stick!
7. Cook the Waffles
Drop a big spoonful (about a heaping tablespoon to ¼ cup, depending on your iron’s size) into each quadrant. The batter will spread quite a bit. Close the lid and let it do its thing for about 3 to 5 minutes, or until the iron stops steaming and the waffles are set.
8. Remove Carefully
A quick tip: because this is a brownie batter, these are a little more fragile than traditional waffles. When they come out of the iron, use a spatula to gently cut them into fourths right on the iron (carefully!), and remove them in smaller sections rather than trying to lift the whole giant waffle out at once.
9. Dress Them Up!
Serve warm, topped with a scoop of ice cream, a heavy drizzle of chocolate syrup, and a cherry on top. Throw a candle on top if you want, and dig in. Yep, fudgy brownie… yummy! Let me know what you think when you try them!
FAQs
Do I need to grease the waffle iron for brownie waffles?
Yes, absolutely! I highly recommend spraying your waffle iron thoroughly with non-stick cooking spray before you put the batter in, even if your waffle iron is completely non-stick. The sugar in the brownie batter makes it sticky, and a quick spray will save you a lot of headache!
How do I know when brownie waffles are done?
They usually take about 3 to 5 minutes to cook perfectly! The easiest way to tell that they are ready is to watch the steam coming out of your waffle iron. Once the iron stops steaming, your brownie waffles are usually good to go! You want them soft on the inside but crispy on the outside.
Why are my brownie waffles falling apart when I take them out?
Because this is a true brownie batter and not a traditional waffle batter, they are a little more fragile! My biggest tip is to use a spatula to gently cut the waffle into fourths right on the iron, and then take out the smaller sections one by one. It’s so much easier than trying to lift one giant, heavy brownie waffle!
What toppings are best for brownie waffles?
You can keep it simple with just whipped cream, but I love going all out! Talk about the perfect breakfast in bed for your birthday. My favorites are a big scoop of vanilla ice cream, a drizzle of homemade chocolate syrup, maybe some sprinkles or candles, and a cherry on top!

Ingredients
- Equipment Needed:
Waffle iron
Mixing bowls
Whisk
- Ingredients:
½ cup (50g) unsweetened cocoa powder
½ cup (113g) unsalted butter, melted
4 large eggs, lightly beaten
1 ½ cups (300g) granulated sugar
2 cups (240g) all-purpose flour
½ tsp (3g) salt
1 tsp (5ml) vanilla extract
Non-stick cooking spray (for the waffle iron)
- Toppings:
Ice cream
Homemade chocolate syrup
Whipped cream
Cherries
Directions
- Preheat your waffle iron.
- In a mixing bowl, combine the unsweetened cocoa powder and melted butter, mixing until smooth.
- In a separate small bowl, lightly beat the eggs with a fork, then add them into the cocoa mixture.
- Add the granulated sugar, then gradually add the all-purpose flour, stirring gently.
- Add the salt and vanilla extract to the bowl. Fold the batter gently just until the ingredients are combined. Do not overmix.
- Generously spray the hot waffle iron with non-stick cooking spray.
- Drop a large spoonful of batter into each quadrant of the waffle iron (it will spread out as it cooks).
- Close the lid and cook for 3–5 minutes, or until the waffle iron stops steaming.
- Carefully cut the waffle into fourths before removing it from the iron, as the brownie texture makes them more fragile than regular waffles.
- Serve warm, topped with ice cream, chocolate syrup, and a cherry.
Notes
- Pro Tip for Sticking: You MUST spray your waffle iron with cooking spray before adding the batter, even if your iron claims to be non-stick! The sugar in the brownie batter loves to stick.
- Handle With Care: Because these don’t have the same structure as pancake batter, they are fragile! If you have a large Belgian waffle maker, separating them into quadrants before lifting them out will save them from breaking in half.
- Storage: These are definitely best served fresh and warm so the ice cream melts right into the pockets! If you have leftovers, keep them in an airtight container in the fridge and pop them in the toaster oven to reheat and crisp up. Leftover waffles and brownies are commonly reheated this way and can also be frozen for longer storage.
