For the Chicken and Wrap

  • 4 large boneless and skinless chicken breasts (about 6 to 8 oz each)
  • 1 tbsp olive oil, or cooking oil of choice
  • 8 to 12 slices of thin cut bacon (2 to 3 slices per breast)
  • 1 tbsp leftover bacon grease, for searing

For the Head to Toe Seasoning Blend

  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder, or garlic salt
  • 1/2 tsp salt, adjust if using garlic salt or salty Cajun blend
  • 1/2 tsp black pepper

For the Cheesy Bacon and Spinach Filling

  • 4 oz cream cheese, softened to room temperature
  • 1/2 cup shredded mozzarella cheese
  • 3 tbsp frozen spinach, thawed and squeezed completely dry, or 1/2 cup fresh baby spinach, chopped

1. First, Let us Make That Creamy Filling!

Preheat your oven to 375°F (190°C). To get started, you are going to use some frozen spinach. You are going to use about three tablespoons of that, but you can use fresh spinach too, even better! You will be adding some cream cheese in there as well. Make sure it is nice and soft so it mixes easily. Toss in some shredded mozzarella, season it with a little Italian seasoning, and give that a quick mix.

Now, you are taking this to the next level. Add more bacon right to the filling! Chop up some pre cooked crispy bacon, add it to the bowl, give it a stir until perfectly combined, and put it on the side.

2. Butterfly the Chicken

Make sure your chicken breasts are nice and clean. Lay your clean chicken breasts flat on a cutting board. Using a sharp knife, you are going to carefully slice horizontally through the thickest part of the breast to create a little pocket so you can insert the filling. Do not cut all the way through!

3. Prepping and Seasoning the Chicken (From Head to Toe!)

Now to season the chicken breast from head to toe, inside out. You want it to be nice and tasty! Before seasoning, I always add a little oil so my seasoning can actually stick onto the chicken. Rub the outside and the inside pocket of each chicken breast with olive oil. In a small bowl, mix together your paprika, Cajun seasoning, garlic powder, salt, pepper, and the rest of the Italian seasoning. Give that a mix, and rub the seasoning blend all over. Make sure you season the inside of the pocket too! Make sure it is seasoned from head to toe!

A quick food safety note: since you are handling raw chicken and will be moving on to raw bacon in the next step, wash your hands, cutting board, and any bowls that touched the raw chicken before continuing.

4. Stuffing and Wrapping It Up

Once the chicken looks very well seasoned, you are going to stuff in our cream cheese filling. Just spoon about 2 to 3 tablespoons right into the pocket of each chicken breast. Do not overstuff the chicken breast or it will all melt and leak out everywhere! Press the edges closed gently.

Now, you are going to wrap it tightly with 2 to 3 slices of raw bacon around each stuffed chicken breast. You can wrap all around it completely, but I like to leave a little space in between the slices so you can actually see the beautifully seasoned chicken breast underneath. Use toothpicks to secure the ends if needed, and make a mental note to remove them before serving!

5. Searing in the Cast Iron

You are going to give the bacon some color in our cast iron skillet first before you bake it. Heat a cast iron skillet over medium high heat with a little reserved bacon grease. Place the wrapped chicken breasts in the skillet just to give the outside a nice sear. You are not fully cooking the chicken or the bacon here on the stove, we just want to get some nice color going. Sear it for 2 to 3 minutes per side, flip it over, and then turn off the stove. Wipe away any massive puddles of excess grease from the pan with a paper towel or napkin.

6. Baking

Transfer the oven safe cast iron skillet directly into your preheated oven. You are going to bake this at 375°F for about 25 to 30 minutes.

7. Rest and Serve
