What You’ll Need and instructions

Ingredients

The Meatloaf Base:

  • 2 lbs lean ground beef (93/7 recommended)
  • 30 Ritz crackers, crushed
  • 2 large eggs, beaten
  • 1 packet Lipton Onion Soup Mix
  • ½ medium yellow onion, diced
  • ½ medium green bell pepper, diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • ½ tsp salt (iodized or table salt)
  • The Glaze/Binder: 1 cup total mixture of Sweet Baby Ray’s Hickory & Brown Sugar BBQ Sauce + Ketchup (equal parts, or to taste)

The Mac & Cheese Topping:

  • 16 oz (approx. 3 cups dry) elbow macaroni
  • 2 cups whole milk (or evaporated milk for richness)
  • 1 can (10.5 oz) condensed cheddar cheese soup
  • 8 oz sharp cheddar cheese, shredded (divided)
  • 8 oz Monterey Jack cheese, shredded (divided)
  • ½ tsp white pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • Garnish: Smoked paprika (“Smoke Pappy”) and fresh parsley

Step 1: Preheat & Prep

Preheat your oven to 350°F (175°C). Lightly grease a 9×13 casserole dish. In a small bowl, mix the BBQ sauce and ketchup together to make your glaze.

Step 2: Mix the Meatloaf

In a large bowl, combine the ground beef, crushed Ritz crackers, eggs, diced onion, diced bell pepper, onion soup mix, garlic powder, onion powder, salt, and black pepper. Add about 1/3 of your BBQ/Ketchup glaze into the meat mixture.

Step 3: Form the Base

Use your hands (gloves recommended!) to mix until fully incorporated. Press the meat mixture into the bottom of the casserole dish to form a flat, even layer.

Step 4: Glaze & Bake

Spread the remaining BBQ/Ketchup glaze over the top of the raw meatloaf. Bake uncovered for 35 to 50 minutes (until the meat is mostly cooked through).

Step 5: Boil the Pasta

While the beef cooks, boil the elbow macaroni in salted water according to package directions. Drain and set aside.

Step 6: Make the Cheese Sauce

In a large saucepan over medium heat, whisk together the milk and condensed cheddar cheese soup until smooth and warm. Stir in the white pepper, garlic powder, onion powder, salt, and black pepper.

Step 7: Melt the Cheese

Add half of your shredded cheddar and half of your shredded Monterey Jack into the sauce. Stir until melted and creamy.

Step 8: Combine

Add the cooked macaroni to the cheese sauce and stir until well coated.

Step 9: Assemble

Remove the meatloaf from the oven. Pour the mac and cheese mixture over the top of the meatloaf layer. (If the meatloaf shrunk, fill in the sides with extra mac!).

Step 10:Final Topping

Sprinkle the remaining shredded cheese over the pasta. Dust with smoked paprika and fresh parsley.

Step 11: Final Bake

Return the casserole to the oven for 20 minutes, or until the cheese is melted, bubbly, and golden.

Step 12: Rest

Let the casserole sit for 10 minutes before slicing to allow the layers to set.

Why This Dish is Straight Fire

Look, let me tell you why this Meatloaf & Mac Casserole hits different, for real.

First off, you’re getting two classic comfort foods in ONE dish. That’s already a win. But it’s not just about throwing two things together—it’s about how they work together, you know what I’m saying?

That meatloaf base? It’s soaking up all the cheesy goodness from the mac on top while the mac is catching all those savory meat juices from below. It’s like they’re having a flavor party and everyone’s invited.

The Sweet Baby Ray’s BBQ sauce brings that sweet and smoky vibe that cuts through all the richness. Without it, this would just be heavy.

And those fresh bell peppers and onions in the meatloaf? They add little pockets of texture and freshness so every bite isn’t just the same thing. You get a little crunch, a little sweetness—it keeps your taste buds awake.

Then there’s the cheese situation. We’re using real, freshly shredded cheddar and Monterey Jack that melts into this gooey, stretchy blanket over everything. None of that pre-shredded stuff that clumps up. This melts smooth and creamy, the way it’s supposed to.

The Ritz crackers in the meatloaf? Genius. They keep it moist and add this subtle buttery flavor that you can’t quite put your finger on, but you know it’s there making everything better.

Bottom line: This dish is comfort food on steroids. It’s what you make when you want everyone at the table to shut up and just eat because it’s THAT good. One pan, maximum flavor, minimum effort. That’s a winning combo every single time.

Combine two comfort food classics in one unforgettable dish with this Meatloaf & Mac Casserole. This recipe features a juicy, seasoned beef base packed with peppers and onions, smothered in a sweet and smoky BBQ glaze, and topped with a rich, bubbly layer of homemade macaroni and cheese. It’s the ultimate hearty meal that delivers savory, cheesy goodness in every bite.

Ingredients

  • 2 lbs lean ground beef (93/7)

  • 30 Ritz crackers (crushed)

  • 2 large eggs

  • 1 packet Lipton Onion Soup Mix

  • ½ cup Sweet Baby Ray’s BBQ Sauce

  • ½ cup Ketchup

  • ½ medium onion, diced

  • ½ medium green bell pepper, diced

  • 16 oz elbow macaroni (dry)

  • 2 cups whole milk

  • 1 can (10.5 oz) condensed cheddar cheese soup

  • 8 oz block Sharp Cheddar cheese

  • 8 oz block Monterey Jack cheese

  • 1 tsp garlic powder (divided)

  • 1 tsp onion powder (divided)

  • ½ tsp white pepper

  • ½ tsp smoked paprika

  • Salt and black pepper to taste

  • Fresh parsley, chopped (for garnish)

Directions

  • Preheat oven to 350°F. Grease a 9×13 baking dish.
  • Mix BBQ sauce and ketchup in a small cup.
  • In a large bowl, mix beef, crackers, eggs, soup mix, diced veggies, spices, and 1/3 of the sauce mixture.
  • Press beef into the baking dish. Top with remaining sauce. Bake 40-50 minutes.
  • Cook macaroni per package instructions; drain.
  • In a saucepan, heat milk and cheddar soup. Melt in half of the shredded cheeses and seasonings (white pepper, garlic/onion powder).
  • Toss macaroni in the cheese sauce.
  • Remove meatloaf from oven. Top with mac and cheese.
  • Sprinkle with remaining cheese, smoked paprika, and parsley.
  • Bake 20 more minutes until bubbly.
  • Let rest 10 minutes before serving.

Notes

  • Milk Swap: I used whole milk, but I think evaporated milk would make it even richer.
  • Cheese: I used Monterey Jack and Cheddar, but use whatever combo you like. Mozzarella works too. Always grate your own cheese—skip the bagged stuff!
  • Gravy Twist: Next time, I might try this with brown gravy instead of the BBQ glaze for a different vibe.
  • Shrinkage: Lean beef might shrink a bit in the pan; just fill the gaps with extra cheesy noodles.
